Step by Step Upside-down pineapple cake (Volteado de pina)

This is what we called ‘volteado de piña’; it is soft, and moist, full of pineapple flavor. Perfect for any celebration. We usually bake it during Christmas and new years holidays.

What is Volteado de Pina

An upside down pineapple cake is a cake that has pineapple and caramel on top and a soft batter in the bottom.

Simple ingredients

Cake flour
Baking powder
Eggs
Butter
Granulated sugar
Vanilla
Pineapple in rings shape
Pineapple juice (from the can)
Maraschino cherries (optional)

How to make volteado de pina (step by step)

  1. For the caramel, add sugar in a pan at medium heat and stir constantly until it becomes liquid. Once if fully liquid transfer it to the baking pan you will use to bake the cake. Spread caramel quickly to cover the surface of the baking pan.
  2. Spread the caramel evenly and add pineapple rings, and cherries in the middle of the rings. It is ok if the caramel is already hard at this point.

3. In a bowl, using an electric mixer cream butter with sugar. Add eggs, one by one.

4. Add vanilla and pineapple juice.

5. Sift flour with baking powder. At this point, do not use the electric mixer.

6. Add batter to the prepared pineapples and bake at 350 for 50-55 minutes.

7. Use tin foil to avoid burning of the cake in the last 20 minutes. Enjoy!

How to serve

Wait to cool completely before removing it from the mold. Cut and serve individual pieces. Some people like their piece with a hot drink.

How to store

Store are room temperature for about 3 days. Do not freeze. The fruit contains to much water and it can make the cake soggy as it defrosts.
