This is what my brain thinks when someone says “breakfast for dinner”. A full plate with beans, eggs, sour cream, and sweet plantains. In this recipe, I am showing you how to make green beans with eggs. It makes for a great side in your breakfasts, or dinners.
The key here is to let the green beans cook (soften) before adding the eggs mixture.
Simple ingredients
Green beans: You can buy these already cleaned, just ready to dice. I bought mine not clean so I had to rinse them, and cut the ends.
Eggs
Tomato
Onion
Anaheim pepper
salt and pepper
Oil: I use canola oil, olive, oil, or avocado oil.
How to make “Ejotes con huevo” (step by step)
- Start by cutting your tomato, onion, Anaheim pepper, and the green beans to a similar size. I used my vegetable chopper to make this step even easier.
- In a bowl whisk eggs, add salt and pepper.
- In pan –at medium heat, add the oil, and soon after add onion. tomato, and Anaheim pepper. Mix well and let it cook for about three minutes.
- Add the green beans and stir. You can add the bullion at this point. Using a lid, cover the pan and let it cook for about five minutes at low heat. This will help soften the beans. W don’t want the beans too soften so keep checking to make sure they have the consistency you like.
- Add the egg mixture to the pan and stir, until eggs are cooked. Do not over cooked the eggs, keep stirring the mixture until the eggs are barely cooked.
- Serve hot with black beans, sour cream, and sweet plantain (optional) Enjoy!
How to serve
Serve hot with black beans, sour cream, and sweet plantain (optional), or it can be a side in your gatherings. You can also use this without the eggs, and it’s so good as well. Great to serve with your other main courses.
How to store
Store in the fridge for about three days. Reheat before serving.
