  1. Roast cashews in a pan stirring them constantly at medium heat.
  2. In a blender place cashews and blend until fined. Add rice flour, cinnamon, and vanilla and blend until combined. Add one cup of water and finish blending until combined.
  3. In a pot at medium heat, add milk (five cups) and sugar or piloncillo with the cinnamon stick. Stir until sugar is dissolved, and mixture is barely boiling. Take out the cinnamon stick.
  4. Add to the pot the cashew mixture slowly and stirring constantly.
  5. Add the rest of the milk (I usually use this milk to clean my blender bottle) and a pinch of salt to enhance flavors. Stir until it gets bubbles to the edges of the pot, or until the thickness you prefer.

Notes

  • 1. You can use granulated sugar instead of piloncillo.
  • 2. Add a dash of nutmeg (optional)
