Simple homemade mayonnaise (two steps)

- Add in a base, or mixing bowl all the ingredients starting with the egg, vinegar, mustard, lemon, salt and pepper.
- Add oil on top and let it sit for 30 seconds.
- Using an immersion blender, blend everything together moving it up and down for about two minutes or until thickens to your desired consistency.
- Store in a glass container in the fridge and use within a week, or up to two days.
