Simple Avocado Shrimp Salad (Guacamole con camarones)

This is a salad I first tried when I was in college in El Salvador. One of my best friend’s mom fed us that weekend and years later I remembered how delicious this was that I asked for the recipe. She graciously share it with me and here it is.

This is such a fresh, light, and full of flavor guacamole. I actually use it as main dish because I add shrimp to it, but it can be an exciting side, or dip.

Simple Ingredients

Avocado: I used hass avocado, but any type will work.

Onion: I used white onion, yellow will work. Also, you can substitute with purple, or green onions.

Shrimp: Make sure these one do not get overcooked.

Lime juice: You can totally use lemon if you like it more.

Salt and pepper

Greek yogurt, or sour cream (optional)

Black olives (optional)

Olive oil (optional)

How to make “Guacamole con Camarones” (Step by Step)

  1. In a small bowl, bring around two cups of water to boil.
  2. Add shrimp and cook for four minutes. Avoid overcooking them so follow this timing. Take the shrimp out.
  3. In a medium size bowl, add the shredded onion, avocado pealed and in medium pieces, lettuce and shrimp. All ingredients separated from the others. See video for reference.
  4. With a fork, start smashing avocado until becomes a chunky paste, mix in with the rest of the ingredients in the bowl.
  5. Add, lime or lemon juice, salt and pepper and enjoy!

How to serve

Serve as a main dish, as a dip, or as a side dish. I served with white rice, and corn chips, and fruit.

How to store

Store in the fridge for about two to three days. The lemon will help the avocado to preserve it longer.
