The Healthiest Salvadoran Style Guacamole

This is the easiest guacamole that is pack of protein and flavor.

In my home, San Miguel, the southeast part of El Salvador, we make things a little different. Although the name of guacamole is the same, and it implies mainly the use of avocados, we use eggs to make it more nutritious and abundant.

It is so simple and if you are used to have boiled eggs in your fridge you will have it ready in five minutes.

I have found that boiling my eggs using the instant pot saves me even more time. I will link the post about it here.

We make guacamole for side dish, but a lot of times could be a quick lunch using corn tortillas as based, This can even be a healthy snack.

We usually serve it as a side dish with chilaquilas, or pollo guisado.

Eat it right away because the lime or lemon can preserve the avocado from browning only for an hour or so.

Instructions

  1. Cut avocado and eggs in about 1/2 inch sizes and stir. You can slightly smash it.
  2. Add lime, salt, and pepper.
  3. Enjoy!

Notes

  • You can use lemon instead of lime.
  • You can eat it over a corn tortilla, by itself, or as a side dish.
