What is Volteado de Platano
This is what we called ‘volteado de platano’; it is soft, moist, and full of pineapple flavor. Perfect for any celebration. You can find them in some of the bakeries in San Salvador.
An upside-down plantains cake has the traditional ripen plantains and caramel on top and a soft batter in the bottom.
Simple ingredients
Cake flour
Baking powder
Eggs
Butter
Granulated sugar
Vanilla
Plantains thin slices
Water
Raisins (Optional)
How to make volteado de Platano (step by step)
- For the caramel, add sugar in a pan at medium heat and stir constantly until it becomes liquid. Once if fully liquid transfer it to the baking pan you will use to bake the cake. Spread caramel quickly to cover the surface of the baking pan.
- Spread the caramel evenly and add plantains slices, and raisins. It is ok if the caramel is already hard at this point.
3. In a bowl, using an electric mixer cream butter with sugar. Add eggs, one by one.
4. Add vanilla and water.
5. Sift flour with baking powder. At this point, do not use the electric mixer.
6. Add batter to the prepared plantains and bake at 350 for 50-55 minutes.
7. Use tin foil to avoid burning of the cake in the last 20 minutes. Enjoy!
How to serve
Wait to cool completely before removing it from the mold. Cut and serve individual pieces. Some people like their piece with a hot drink.
How to store
Store are room temperature for about 3 days. Do not freeze. The fruit contains to much water and it can make the cake soggy as it defrosts.

- Sift flour with baking powder. At this point, do not use the electric mixer.

- Let it rest five minutes and using s knife loose the edges and take it out of the mold flipping the mold into a flat surface.
