Easy seafood paella (Paella de mariscos)

We love seafood and rice, so this dish is one of those favorite dishes that keep on repeat. It is super simple to make. The spices give a great color, and it’s a hearty, full of flavor dish.

In El Salvador, we have a version of paella. This is the way I make mine. Some people also add chicken to this one, but I like to keep chicken and seafood separated. You can make paella with chicken, chorizo, other types of sausages, and it is always such a nice combination or rice, vegetables, and a meat.

Simple ingredients

Precooked or parboiled rice: This is important so that rice does not become gluey while is cooking or after is done cooking.

Seafood mix: This has been a game changer, buying a bag that already have most of the seafood that I like make things easier. I always add extra shrimp and calamari rings.

Carrot

Green onion

Celery

Red bell pepper

Achiote

Paprika

Cumin

Turmeric

Coriander

Shrimp bullion

Oil

Peas (optional)

Mozzarella cheese (optional)

Salt and pepper

How to make Paella de mariscos (Step by Step)

  1. Start by defrosting your seafood. I use microwave, but you can leave it in the fridge a a couple of hours before start cooking. Make sure you strain any water.
  2. Cut all your veggies (celery, carrot, green onion, bell pepper) to a similar size.
  3. In a shallow pan –big enough for the whole dish. Add oil and once in hot add seafood. Cook at medium heat for about five minutes. Stir constantly.
  4. Get all the seafood out of the pan. Add all the veggies to the pan and cook stirring them for about five minutes.
  5. Rinse rice, and then add it to the pan where the veggies are, add all the spices in a little bowl and mix them before adding them to the pan. Stir well until all is combined.
  6. Add all seafood back, stir and add water. Stir again and cover it to cook.
  7. Cook at low-medium heat for about 20 minutes. Keep checking to make sure it does not run out of water and to check the softness of the rice.
  8. Serve, and top with mozzarella cheese (optional) Enjoy!

How to serve

Serve hot, sprinkle with cilantro, and mozzarella cheese (optional)

Store in the fridge and use up within a week.
