This is a traditional dish mostly prepared for Christmas or New Years. A big sandwich roll that is opened and filled with chicken in a red sauce, beets, cucumber, pickled veggies, radish, tomato, lettuce and boiled eggs.
In this recipe, I am describing how I make my red sauce chicken, how to assemble it and I will link some of the other parts of this dish as well.

How to make Christmas Chicken Sandwiches (Step by step)
Follow instructions in recipe card about making the red chicken sauce.
To assemble the sandwich:
1. first, mix together mayonnaise and mustard –that will be the spread for the sandwich.
2. Open the sandwich in half long way on the top, or hot dog style.
3. Cut tomato, beets, cucumber in thin slice pieces.
4. Add spread, then lettuce, chicken piece, tomatoes to the side, beets, cucumber, escabeche, and a boiled egg.
5. Place watercress on top, and add red sauce from the chicken.
6. Enjoy!
How serve
Serve alone –is big enough to cover you whole plate. You can serve it with a cold drink.
How to store
Make sandwiches as you need. You can store all ingredients separated and keep them in the fridge for about one week.

Instructions
- Add cut chicken pieces in a bowl and add mustard, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and cumin. Stir all to combine and cover with a bag, or plastic wrap to let it marinate overnight.
- The next day, in a large pan, add oil to the pan and start frying the chicken about 4 minutes each side.
- Sauté relajo spice in a separate small pan for about 5-8 minutes stirring constantly.
- Prepare red sauce by cutting all the tomatoes, onion, and Anaheim pepper. Place everything in a blender and add garlic, relajo spice, and chicken bullion.
- In a pot, add oil and add all the blended red sauce. Stir often and wait until it boils.
- As soon as the sauce is boiling, add fried chicken to the sauce, let it cook for about 20 minutes at medium heat.
