Easiest beets in the instant pot

One time I bought fresh beets and I decided to cook them in my stove top by boiling them. It took forever! I even cooked something different for dinner and the beets were still cooking. I decided it was not worth it.

In El Salvador, you can find cooked beets in the mercado. The price is reasonably, so my family always bought them that way. After moving to the US, I’ve tried the canned and jarred beets, but honestly I have not been a fan of those. When I decided to make them in the instant pot, they have become a regular part of my diet. I have created a system to eat more beets! And my kids love them too so it’s a win-win!

Ingredients

• 4-6 medium size beets
• 1 cup water

Instructions

1. Cut the ends of each beet.
2. Place the trivet in the instant pot and add all the beets.
3. Add a cup of water.
4. Close lid and set to manual for 25 minutes.
