What is Alfajores

These are crumbly butter type cookies that have a soft caramel in the middle –I use dulce de leche. It makes a huge difference in the taste of them. They are dusted with powdered to add a touch of decoration and sweetness.

Simple ingredients

Cake flour

Unsalted butter

Powdered sugar

Cornstarch

Dulce de leche

How to make Alfajores (step by step)

  1. Using a stand mix stand, or an electric hand mixer, beat all ingredients at medium speed until a dough is formed. Use cold butter for better handling results. Cut butter in 1 inch size pieces. The time to mix it is about 6 minutes. See video for reference on the dough consistency.
  2. Roll out dough using a rolling pin to a 1/2 inch thickness.
  3. Using desired shape cutter, cut dough and place figures on a prepared baking sheet with parchment paper, or silicon mat.
  4. Bake at 350 F for 10-20 minutes, or until the edges are barely brown. The baking time depends on the size and thickness of the cookie.
  5. Assemble alfajores by putting dulce de leche in one side of the cookie, use same shape of a cookie and place it to cover it forming a sandwich type.
  6. Dust powdered sugar over each alfajor, enjoy!
