This the authentic Salvadoran hot chocolate. I actually love that I learn all the cooking tips from my mom and from childhood neighbors.
The ingredients are simple, the process is simple, you need a good grinder or a Molino to ensure the right consistency.
What is Tablilla
Tablilla is the chocolate that is made to ultimately make the hot chocolate. Cocoa beans are easy to find in El Salvador. The weather makes it possible for these trees to grow. If you go to the market, it is not difficult to find some of the vendors with this product.

Cocoa beans
Cinnamon stick
Granulated sugar
Water
How to make Tablilla (step by step)
- Start by placing all cocoa beans over griddle, a Comal, or a flat pan. Stir them constantly at medium high heat.
- Once the beans are toasted with some black peal, place them in a bowl to cool a little.
- Start rubbing all the beans to get all the peal out. This process is easy when they beans have been toasted well, and they are still a little hot. be careful doing this to avoid burning. See video for reference.
- Place all cocoa beans in a clean bowl and add cinnamon stick broken into smaller pieces. Then add sugar.
- Soak the mixture with about 1/3 cup of water, combining everything until sugar looks transparent but not liquid.
- Using a powerful blender, or a molino. Grind the mixture and place it in a bowl.
- Checking the dough is not too hot but not too cool, start making the shape you desire for your tablilla.
- I used 1/4 cup to measure my chocolate balls. Each piece makes two cups of hot chocolate.
- Store pieces in an airtight bag or container. Use them when you need. Enjoy!
How to serve
Add tablilla in a pan with water and bring it to boil, stirring constantly. Serve hot. The ratios of water and tablilla will depend on the size of the tablilla. I usually make 1/4 cup tablilla and two cups of water.
How to store
Store tablilla in an airtight container or box. You can place it in the fridge to keep it from drying. It last up to six months.
