Life has been certainly busy, cooking is always part of who I am. However, the recording, and sharing part of things have fell to one of the last priorities right now. Every time that I make something or try a new dish made by someone else, I want to share but then I move into the next thing I need to do that I never do.
New baby!
It has been a joy to bring baby Lincoln to our lives, he is so sweet and we are enjoying the newborn bliss and recovery well.
We have been blown away with the support of our neighbors and family, for checking and bringing amazing meals, gifts to the kids, and offering their help in what they can. We feel truly grateful for the love we have felt and I hope we can give and reflect that back to those around us!
We moved!
We moved right before having baby —the end of October. It was chaos, but again, we had so much support. I won’t lie, I cried a few times just because of missing, missing my old neighbors, my routine, my walks, my kitchen, the smell of the house, the crowded bathroom, the messy living room with toys all around, the small dining table and most of all, the memories that we have made with our family over the last six years. Even when it was a hard season in our lives, we still feel so much joy. This was the only home I knew after I moved from El Salvador so it was really special.
New home!
Don’t take me wrong, we are extremely grateful for the new home, it is amazing, it checks most of the boxes we envisioned in a home, so we are truly excited to love the new place and also make new memories.!
If you made it this far, thanks for letting me share! One recipe I will share here, just in the description, is this cozy drink that I learned when I lived in Guatemala— serving a mission for my church. Its name is Ponche de Frutas.
This drink is so cozy, perfect for fall-winter weather!
Ingredients:
12 cups of water
1/4 of a coconut ( 1 cup, cut in small cubes)
1 pineapple (ripe)
5 cloves
3 pepper corn
1/2 cup raisins
1/2 cup of prunes
2 apples( peeled and cut in small pieces)
2 cinnamon sticks
1 cup of red grapes
1 dulce de panela (piloncillo, you can find it at a Mexican market)
Instructions:
Boil water with the dulce de panela and cinnamon sticks.
Cut pineapple in small pieces without peeling it —from the inside and add to the water, add coconut, apple and grapes together.
Let it boil 2 hours in total, one hour while you put all the ingredients, and another hour just with the lid on.
