The easiest Salpicon (In the instant pot)

Salpicón is made with cooked, finely chopped beef, radish, onion, and mint. Add a good amount of lime that will make your mouth water!
It’s so refreshing, full of flavors, and a great side or main course of lunches and dinners.

You know how much I love make things easier and this is not the exception. Just cook the meat in the pressure cooker and forget about it for 35 minutes. Chop everything else and this dish is ready in no time.

Simple ingredients

Beef: Eye of round, this is particularly the easiest to mince, chop for this dish.

Radish

Red onion

White or yellow onion

Garlic

Mint

Lime or lemon

Salt

Black ground pepper

How to make Salpicon (Step by Step)

  1. Start by seasoning meat with kosher salt and ground pepper
  2. Place the trivet, or a rack in your pressure cooker and place the meat there.
  3. Add white or yellow onion, garlic and water. Close it and seal it to cook on high for 35 minutes. You can make this process in a regular pot and keep checking until meat is tender. The water ratio will change if you make it this way.
  4. Cut your radish, red onion, and mint.
  5. Once the meat is ready, chop it in similar size as the veggies.
  6. In a bowl, add chopped meat, veggies, and drizzle with all the lime or lemon juice. Add extra salt and pepper to your liking, and enjoy!

How to serve

Serve as a side for dinner or lunch as your main protein. We love to put it over white rice. We also eat it with corn chips and it’s an amazing appetizer

How to store

Store in the fridge in a container and cover, eat it within five days.
