Simple Salvadoran beef stew in the pressure cooker

As a mom, I am always looking for ways to cook simple yet flavorful and nutritious meals. This Salvadoran beef stew recipe shows just that. This is know as carne guisada, there are different versions, and every family cooks different, but this easy recipe hit that Salvadoran flavor we sometimes crave.

Once I prepare and place everything in the pot, and set it to cook, I forget about it and move on to the next thing I have on my plate.

Preparing it is simple, and it really has those Salvadoran flavors I remember when I used to make carne guisada. It was actually one of the recipes my mom taught us when I was young. I do like that my carne guisada has “recaudo”, some liquid, or juice from cooking the beef.

Simple Ingredients

Chuck roast: best kind I use to make this dish.

Tomato sauce: When I lived in El Salvador, I used natura’s brand. It is hard to find it here, so I found three different brands that are my personal favorite (not sponsored). Raos marinara, carbone marinara, and the organic Kirkland marinara sauce. With these brands, I have not used bullion, and the flavor still strong and delicious.

Potatoes

Carrot

Onion

Bell peppers

Cumin

Black pepper

Salt

Mustard

Worcestershire sauce

How to make beef stew (carne guisada) in the pressure cooker (Step by step)

  1. Cut meat in one inch size chunks. Add cumin, pepper, salt, Worcestershire sauce, mustard, and rub it to all the meat. You can also use a bag, or a glove to do this process. Set aside, it would be better if you marinate for at least two hours or overnight in the fridge.
  2. Peal potatoes, and carrot. Dice all the veggies to one inch size cubes.
  3. Add oil to the electric pressure cooker. Press sauté mode. Add meat and sear all sides.
  4. Quickly take the meat out, and add onions and peppers. Stir and cook them for about 30 seconds. Then incorporate potatoes, and carrot. Stir well and let it cook for about a minute.
  5. Add the meat back to the pot, and combine well. Incorporate tomato sauce, bullion, and water. Stir well, and turn off sauté mode.
  6. Close with the lid and set pressure cooker on high for 40 minutes.
  7. Let natural release and then serve over rice. Enjoy!

How to serve

Serve with rice, and a green salad or a salad of your choice.

How to store

Store in the fridge for about three to five days.
